Right, please bear with me while I try to phrase this right...
Using my DCS-420 (though it happens with my EOS-DCS-5, as it's the same sensor, etc.) often areas in sharp focus, (especially thin things such as hairs,) can 'pixelate'/show up the line structure, whereas areas out of focus can appear completely non-digital & film-like.
The image below shows what I mean
This was taken with a 'decent' lens, a Tamron 90mm macro. File processing doesn't seem to add/detract anything.
I suppose this pixelation happens only with better lenses-is this a case of the lens resolving more detail than the senosr can record?

You're seeing color aliasing and moiré, common in the early DSLR's. In other words, it's not a lens issue.
